The songs bounced from opera (Ms. Fleming on “O Mio Babbino Caro” and “La Ci Darem La Mano,” aided by Sting) to jazz (Chris Botti on Miles Davis’ Sketches of Spain”) to township jive (Paul Simon on “Graceland”).
